Rempejek katjang, peanut cookies

The famous Indian peanut cookies. Is also eaten as a snack or ….. we like eating chips.

250 g raw peanuts
1 shallot
2 cloves garlic
100 g rice flour
100 g flour
2 tsp. ketoembar
1 tsp. cumin
1 tsp. kentjoerpoeder
2 tsp. salt
50 g santen (coconut in block form)

Soak the raw peanuts in boiling water and remove the skins as soon as possible. Drain and let the peanuts drain. Peel the shallot and garlic and chop them finely. Crush them, mix them with rice flour and the flour and the spices and salt.

Solve the santen in 1 cup lukewarm water. Pour the flour mixture and make a thick batter of it. Add the dry peanuts to the batter and stir a lot about. Fry in hot oil ladle-wise round cakes.

Rempejek is usually eaten with gado-gado, the rice table or just with your fingers.
