1/2 kg goat
6 shallots
4 cloves garlic
3 and 2 red chillies lombokjes
1 tsp. breath
100 ml of water
5 tbsp. oil
3 djeruk purut leaves
3 salam leaves
1/2 tsp. black pepper
salt to taste
3 tbsp. sweet soy sauce


Cut the meat into thin slices but … not too thin though. The shallots and garlic into thin slices and halve the chillies and chillies. Mix the tamarind with the water. Heat in a wadjan the oil and fry the shallots, garlic, salam leaves and djerut purut very briefly, on a small fire.

Then add the meat and cook for about 3 minutes. Then the water, salt and pepper and bake it for 5 minutes. Finally the soy sauce and chillies and Lombok to it and the whole thing cook for about 5 minutes until everything is nice and tender.
