Tender, braised lamb seasoned and tasty. This is actually a recipe with goat but alas …. it is rather difficult to come by.


1/2 kg goat (kid)-meat
1 serehstengel, bruised
vegetable oil
1 cinnamon stick
500 ml thick coconut milk (santen asli)
salt to taste


1 tsp. aniseed
1 tsp. cardamom
7 candlenuts
2 tsp. ketumbar
1 tsp. cumin
5 cloves
1 theel.nootmuskaat

10 shallots or about 3 large onions
4 cloves garlic
4 cm ginger (djahé)
6 cm kunjit / kunyit (turmeric) or 1 heaped tsp.
3 teaspoons of cane sugar or gula djawa a slice and 3 red lombokjes (leave the seeds in it for the good “pedis” it)

Cut the meat into pieces and rub or grind the ingredients for the paste fine into a nice paste. Heat in a wadjan the oil and fry the paste in 3 minutes. Add the cinnamon and the meat and fry well for 3 minutes. Then add the coconut milk and all in 45 minutes gently stew. Remove the cinnamon stick before serving
