Carang mas, Deep-fried sweet potato strips

Deep-fried sweet potato strips. Nice for a drink but also to use as a side dish or snack.


1/2 Kg. sweet potato (available at almost any supermarket)
3 large tbsp. grated djawa gula (palm sugar)


Peel the potatoes and cut them into very, very, thin strips or use a grater. Heat in a wadjan (or large frying pan) the oil and fry the slices until golden brown.

Let them drain and then pour the oil from the wadjan. Put the slices back into the wadjan (is now on a small fire) and add the palm sugar and cook until the sugar has melted. The sugar mix well with the potato slices.

Take 1 tbsp each time this viscous mass from the wadjan and then press it flat on wax paper … until a nice round cookie created.
