Babi Kecap

This is a popular pork dish with a spicy sauce.

1 lb pork
2 long red chilllies
5 hot chillies
5 shallots
3 cloves of garlic
1 piece of turmeric
1 piece of ginger
1 piece of lesser galangal
1 piece of greater galangal
1 teaspoon terasi
1 teaspoon pepper
1½ teaspoon salt
4 lbs sweet soy sauce
2 tablespoons oil


1. Cut pork into strips.
2. Blend the chillies, shallots, garlic, turmeric, ginger, lesser galangal, greater galangal, terasi, pepper and salt.
3. Add soy sauce and oil to the spice mixture.
4. Put pork and spices in a large pot.
5. Fill the pot with water to cover the meat.
6. Cook for 1 hour.
7. When the water has boiled away, the pork is ready.
