Pindang Kuning, Moluccan fish dish

Pindang Kuning (Moluccan fish dish)Pindang-kuning

Ingredients: 2 people

2 medium mackerel
1 sereh
1 piece of laos
3 shallots
2 green lombok
1 stalk spring onion
1 lemon or lime is better
2 glasses of water
salt (to taste)

For the paste (spice paste):

5 kemirienootjes
1 piece djahé
1 piece kunjit
2 chillies (small chillies)
2 cloves garlic

preparation:

Rub the spice paste ingredients finely in tjobek or mortar.
The shallots and galangal thinly cut serehstengel cut in half into two pieces.
The green lombok obliquely cut thin, spring onions diagonally cut coarsely.
Mackerel in slices of 2 cm cut

Little oil in a pan / wok do hot oil and then let the paste, lemongrass and galangal stir-frying (not to be brown) (1/2 minute). Then add shallots and green lombok and a glass of water and lemon to do.

The taste tests, the whole should have a slight lemon flavor.
If necessary, add more salt to taste.
Then the mackerel paste there and shortly after all the spring onions in the sauce do short let simmer until you see the mackerel is cooked, not too long because otherwise the mackerel apart.

Serve with white rice and cucumber.
