Lotek Vegetables with peanut dressing
200 GRAM CABBAGE, shredded
2 POTATOES, peeled and in cubes
100 GRAM BEAN SPROUTS
200 GRAM PUMPKIN, in cubes
200 GRAM FRENCH BEANS, cleaned and halved
50 GRAM PEANUT BUTTER
2 TBSP TAMARIND JUICE
2 TBSP GRATED COCONUT
1 TBSP SHRIMP PASTE (leave out if you are vegetarian or vegan)
1 TSP SAMBAL OELEK

Bring 1 liter water to the boil with salt to taste. Put the potatoes in, add the cabbage after 5 minutes, add the green beans and pumpkin yet another 5 minutes later. Cook this 5 minutes more, add the bean sprouts for one minute and drain the water. For the dressing, stir the peanut butter together with the tamarind juice, the coconut, the shrimp paste and the sambal and a few tablespoons water. Put the vegetables in a bowl and pour the dressing on top. This is a Sundanese recipe from West-Java.
